H4H Week 2

It was super easy to get 3-4 servings of veggies in at breakfast time with a serving of Breakfast Quiche (Deanne's recipe) on top of 2 cups of spinach, 1/2 cup of broccoli, and 1/2 cup of asparagus. Heated it up in the microwave and it made for a very filling breakfast and a great way to start my day.

  2. I'm a vegetarian, so this weeks challenge was easy for me since veggies are a staple to every meal for me each day. I steam veggies with dinner each night (this week I had spinach, broccoli, zucchini and asparagus) and make a large salad with multiple types of greens, spinach, beets, carrots, cabbage, cucumber, avocado, tomatoes, mushrooms, artichoke hearts....yum!

  3. Mine was easy for two days of the week but it is not recommended. Plan a party for 120+ people and cook for two days all the while eating the food you are preparing! ;-)

  4. Making soup was the easiest way for me to get all the vegetables. I love soup and can eat soup for every meal (and sometimes do!). I also use it to get more vegetables into my kids, they especially like anything pureed: pea soup with lots of carrots and onions; broccoli and cauliflower soup; butternut squash soup; tomato and carrot soup. Served with a salad, the soups helped me get all the veggies I needed.

  5. My standard day 1-4 breakfast of 2 eggs, black beans, turkey, & salsa on top of 2 cups of spinach was how I kicked off each day... Asparagus soup (Deanne's yummy recipe) and or salad for lunch and/or snack helped, then for dinner lots of oven roasted broccoli (that happens to be the one veggie that everyone in the household likes)...

    I found that 10 servings in a day was easy, but a minimum of 2 in each meal kept me on my toes!

  6. Veggies - tricky! I don't really like cooked veggies and I am extremely busy right now. I am only really home when I am sleeping. So, I have to keep it simple. I shred and cut carrots once a week and put them in little baggies. Same for cauliflower and broccoli. The only veggies I like cooked are green beans and asparagus. So, I sautee the asparagus in a MASS bunch and boil a million beans - toss with a little olive oil and garlic. Yummm! So, basically, I have these all cooked and every time I eat something, I take 2 baggies of veggies out of the fridge. Oh, and I put a ton of veggies in my omelet in the morning - asparagus, sautéed red peppers, green onions, and whatever else I have. I also buy the twice washed spinach leaves and eat a small salad with every lunch and dinner. Good luck everyone!

  7. I have to be honest I only did I one day of the week. This was the hardest challenge I think we have ever had. The only way I did it was drinking the greens to go. I could only choke it down one day. Way to go all those who did it.

  8. Veggie days were awful I will just say I did not receive any points, but I will have 7 hours of sleep every night :)
